Many of these recipes are high in protein and fiber, as well as gluten-free and oil-free. Whether you have an overflowing garden, picked up too much zucchini at the farmers’ market, or simply want to eat more vegetables, there is something here for every meal of the day.

Why Zucchini Is So Good for Volume Eating

I’m a Registered Dietitian focused on meeting my protein, fiber, and micronutrient goals while maintaining a healthy weight. These zucchini recipes make it easy to pack more nutrition into light and delicious meals.

Zucchini is one of my favorite vegetables for volume eating because it adds a lot of food to your plate for relatively few calories. One medium zucchini is mostly water and provides fiber, so it can increase the volume and satisfaction of a meal without adding a lot of calories.

It’s also a source of vitamin C, potassium, vitamin B6, and antioxidant carotenoids, including lutein and zeaxanthin. Keeping the skin on provides additional fiber and beneficial plant compounds, so I rarely peel zucchini.

What I especially love about zucchini, though, is how easy it is to incorporate into meals you already enjoy. Its high water content helps create a moist texture without making the finished recipe taste like vegetables.

Why I Love Cooking With Zucchini

Zucchini has such a mild flavor that it works surprisingly well in both sweet and savory recipes. It can add moisture to baked goods, bulk up salads and wraps, replace noodles in lasagna, and even help bind veggie patties.

From a nutrition perspective, I especially like using zucchini as a way to add more vegetables to foods you might not normally think of as vegetable-forward. Pair it with protein-rich foods such as lentils, tofu, chickpeas, chia seeds, nuts, and seeds, and it becomes part of a much more satisfying meal.

Is zucchini healthier raw or cooked?

Both are nutritious. Raw zucchini retains more heat-sensitive nutrients, such as vitamin C, while cooking can make carotenoids like lutein and zeaxanthin more bioavailable. Enjoying zucchini both ways gives you the benefits of each. Pair it with a healthy fat, such as nuts, seeds, or tahini, to help your body absorb its fat-soluble carotenoids.

Can you eat zucchini raw?

Yes. Zucchini can be eaten raw. Try it grated or spiralized into salads and wraps, or blend it into recipes such as chia pudding.

Do you have to peel zucchini?

No. The skin of zucchini is tender and completely edible, so I typically leave it on. It also saves prep time and adds color and texture to recipes.

Should you squeeze the water out of zucchini?

It depends on the recipe. For recipes where excess water can interfere with texture-such as zucchini pancakes and patties-squeezing the zucchini is important. In baked recipes, however, some of that moisture may be intentional. Always follow the individual recipe rather than automatically squeezing grated zucchini.

What can I make when I have too much zucchini?

Zucchini’s mild flavor makes it incredibly versatile. Grate it into batters, patties, sauces, or oatmeal; julienne or spiralize it for salads, bowls, and wraps; or slice and chop it for soups, curries, stir-fries, casseroles, and sheet-pan meals. You can also blend it into smoothies and sauces or bake with it for extra moisture and vegetable volume.
