👩🏽‍⚕️ Dietitian’s Note

Traditional banana bread is typically made primarily with refined flour, added sugar, and butter or oil. This version takes a different approach.

Pumpkin seeds provide plant-based protein and are particularly rich in magnesium, iron, and zinc.

Buckwheat is a naturally gluten-free whole grain and contributes fiber and minerals.

Flaxseed and psyllium add soluble and viscous fibers while also helping create structure in this egg-free loaf.

Bananas provide natural sweetness, allowing the bread to be made without added sugar.

The result is a more nutrient-dense banana bread that still prioritizes what matters most: a moist texture and plenty of banana flavor.

Why You’ll Love This Recipe:

This healthy banana bread is delicious and easy to make. Plus, it’s:

  • Moist and naturally sweet: Four very ripe bananas provide plenty of sweetness and keep the loaf tender without added sugar.
  • Oil-free: Pumpkin seeds add richness and help create a creamy batter without butter or oil.
  • Made with whole-food ingredients: Buckwheat, pumpkin seeds, flaxseed, and psyllium make this more nutrient-dense than traditional banana bread.
  • Vegan and gluten-free: No eggs, dairy, or wheat are needed.
  • Great for meal prep: Make a loaf ahead for breakfast or snacks throughout the week.

👩🏼‍🌾 Ingredients

Below, I share ingredient notes from both a nutrition expert’s and trained chef’s perspective.

Bananas, buckwheat flour, vanilla extract, cinnamon, nondairy milk, psyllium husk, baking soda, baking powder, flaxseed meal, pumpkin seeds, Medjool dates, and apple cider vinegar.
  • Raw, unsalted pumpkin seeds: Blended directly into the batter for richness, plant-based protein, iron, magnesium, and a tender texture without added oil.
  • Very ripe bananas: The main source of sweetness and moisture. Use bananas with plenty of brown spots for the best flavor.
  • Unsweetened nondairy milk: Adds moisture and helps the pumpkin seeds blend into a smooth, creamy mixture.
  • Vanilla extract: Enhances the natural sweetness and warm banana flavor.
  • Dry ingredients
  • Buckwheat flour: A naturally gluten-free whole-grain flour with a pleasantly earthy, nutty flavor that pairs especially well with banana.
  • Flaxseed meal: Adds fiber and helps bind the egg-free loaf.
  • Whole psyllium husks: Help hold moisture and give this gluten-free banana bread better structure for clean slices.
  • Ground cinnamon: Adds warmth without overpowering the banana.
  • Baking powder and baking soda: Give the loaf lift and prevent it from becoming overly dense.
  • Salt: Optional. Balances the sweetness and brings out the banana and cinnamon flavors.
  • Apple cider vinegar: Reacts with the baking soda to help the egg-free loaf rise and creates a lighter crumb.

See the printable recipe card below for quantities.

Optional Sweet Pumpkin Seed Cream

Vanilla extract, cinnamon, nondairy milk, pumpkin seeds, and Medjool dates.
  • Pumpkin seeds: Make the cream rich and satisfying. Soak in water to cover for 1 hour before blending.
  • Medjool dates: Add a deep caramel sweetness without refined sugar.
  • Nondairy milk: Creates a lighter, velvety consistency for spreading.
  • Vanilla extract: Softens the earthiness of the seeds and adds aromatic sweetness.
  • Cinnamon: Brings a warm, bakery-style note to the topping.

Blend soaked pumpkin seeds with the remaining ingredients. Add more milk as needed until the desired consistency.

🌱 Substitutions

This recipe is versatile and easy to adapt. Below are some simple ingredient substitutions.

  • Nondairy milk: Unsweetened soy milk works especially well, or use oat, cashew, or hemp milk for a rich, creamy consistency.
  • Buckwheat flour: I recommend using buckwheat flour for the intended texture and flavor rather than substituting another flour one-for-one.
  • Whole psyllium husks: Use whole psyllium husks rather than psyllium powder, as they absorb liquid differently. If using psyllium husk powder, use about half as much: 2 ¼ teaspoons powder for 1 ½ tablespoons whole husks.
  • Medjool dates: If your dates are firm or dry, soak them in hot water for about 10 minutes before blending, then drain well.

🍫 Variations

This healthy banana bread is easy to customize with a few simple add-ins for different flavors and textures.

  • Chocolate Chip Banana Bread: Fold vegan dark chocolate chips into the finished batter before baking.
  • Banana Walnut Bread: Add chopped walnuts for extra crunch and classic banana-walnut flavor.
  • Banana Muffins: Divide the batter among a lined muffin pan and begin checking for doneness considerably earlier than you would for a loaf.
  • Without sweet cream: The loaf is naturally sweet enough to enjoy on its own. The Pumpkin Seed Cream is completely optional.

✔️ Storage & Meal Prep

Allow the banana bread to cool completely before storing.

Store it in an airtight container in the refrigerator for up to 5 days. Because this loaf is especially moist, I prefer refrigerating it rather than leaving it at room temperature for several days.

For longer storage, slice the cooled loaf and freeze the individual slices in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator or at room temperature.

Store the Pumpkin Seed Cream (if making) separately in an airtight container in the refrigerator.

Meal Prep

For easy breakfasts and snacks, bake the loaf ahead, cool it completely, and slice it before refrigerating.

You can also freeze the slices individually so you can remove exactly what you need.

If making the Pumpkin Seed Date Icing, store it separately and spread it onto each slice just before eating.

🙋🏽‍♀️ Recipe FAQs

Is banana bread healthy?

It depends on the recipe. Many traditional banana breads contain substantial amounts of added sugar and butter or oil. This recipe uses whole-food ingredients including bananas, pumpkin seeds, buckwheat, flaxseed, and psyllium, with no oil or added sugar in the loaf itself.

What makes this healthy banana bread moist?

Very ripe bananas provide considerable moisture, while blended pumpkin seeds add richness and help create a tender crumb without adding oil or butter.

Can you make banana bread without sugar?

Yes. Very ripe bananas become naturally sweeter as they ripen. This recipe uses 2 cups of mashed ripe banana, so no maple syrup, honey, or granulated sugar is needed in the bread.
The optional sweet seed cream contains naturally occurring sugar from Medjool dates.

How ripe should bananas be for banana bread?

Use ripe or very ripe bananas. Bananas with more brown spots will give the bread a sweeter, more pronounced banana flavor, but they aren’t essential.

Is buckwheat gluten-free?

Despite its name, buckwheat is not a type of wheat and is naturally gluten-free. If you need the recipe to be strictly gluten-free, choose buckwheat and other ingredients that are certified gluten-free to minimize cross-contact.

Why add psyllium husk to banana bread?

Psyllium absorbs and holds water. In this gluten-free, egg-free recipe, it helps bind the ingredients, retain moisture, and create enough structure for the cooled loaf to slice cleanly.

What does flaxseed do in banana bread?

Ground flaxseed absorbs liquid and helps bind the batter, making it particularly useful in egg-free baking. It also contributes fiber and plant-based omega-3 ALA.
